Chicken Quesadilla

Although I like to try new things, I am somewhat of a picky eater and I am always game for a Chicken Quesadilla – my go to I eat like a small child preference…


2 ½ Cups Cooked Chicken, shredded

2/3 Cup Fresh Salsa

1/3 Cup Green Onions, sliced (optional)

¾ to 1 tsp World Market Ground Cumin

½ tsp Morton Salt

½ tsp Savory Spice Shop Oregano, dried

6 Mission 8” Flour Tortillas

¼ Cup Kerrygold Butter, melted

2 Cups (8 ounces) The Better Cheddar Monterey Jack Cheese, shredded

Pam Cooking Spray

Hiland Sour Cream


FIRST In a skillet, combine the first six ingredients: Chicken, Salsa, Green Onions, Cumin, Salt and Oregano

SECOND Cook uncovered, over medium heat, for 10 minutes or until heated through – stirring occasionally

THIRD Brush one side of Tortillas with Butter

FOURTH Spoon 1/3 cup Chicken mixture over half of unbuttered side of each Tortilla

FIFTH Sprinkle Chicken mixture with 1/3 cup Cheese

SIXTH Fold plain side of Tortilla over Cheese

SEVENTH Place on lightly greased baking sheet

EIGHTH Bake at 475 F for 10 minutes or until crisp and golden brown

NINTH Cut into wedges (a pizza cutter works nicely)

Serve with Sour Cream and Guacamole

Makes 6 Servings
