A Cup of Cake

Over the weekend I received this recipe from a clipping stuck inside a birthday card ~ A Cup of Cake ~ and given the fact that yesterday I was in serious search of a cupcake, I thought this fitting to share…

Ingredients

1 Tbsp Whole-Wheat Flour

1 Tbsp All-Purpose Flour

¼ tsp Argo Baking Powder

2 tsp Hershey’s Unsweetened Cocoa Powder

2 ½ tsp C & H Sugar

Pinch of Morton Salt

1 tsp Kerrygold Unsalted Butter, melted

1 Tbsp Vanilla Whole Milk Yogurt

1 Tbsp 2% Milk

1/8 tsp McCormick Vanilla Extract

1 – 6 Ounce Coffee Mug

Pam Cooking Spray

Powdered Sugar or Whipped Cream

FIRST Spray your Coffee Mug with Cooking Spray

SECOND In a small bowl, thoroughly combine Whole-Wheat Flour, All-Purpose Flour, Baking Powder, Cocoa Powder, Sugar and Salt

THIRD In another small bowl, whisk together Butter, Yogurt, Milk and Vanilla Extract

FOURTH Pour milk mixture into flour mixture and combine

FIFTH Spoon mixture into mug

SIXTH Microwave for approximately 35 seconds (depending on the size of your microwave)

SEVENTH If cake doesn’t look set, cook another 10 seconds (again, depending on the size of your microwave – use your best judgment)

After removing from microwave, allow cake to sit for 1 minute

Sprinkle with Powdered Sugar or Whipped Cream

Makes 1 Serving
