Berry Beautiful Salad with Strawberry Citrus Dressing
Happy First Wednesday of February ~ Day 3 of a 7-day detox challenge. Have you started yet? It’s OK to start today or any day. My challenge this week runs Monday through Sunday. As previously stated, my goal for this detox is to simply feel better. Then there’s the little obstacle of the pair of jeans I tried to wear that didn’t fit quite right (or at all). At any rate, drinking plenty of water is critical ~ drink half of your body weight in water each day, in ounces (if you weigh 200 pounds, drink 100 ounces of water). If you hate drinking plain ole water, below you will find a flavored water recipe ~ a different water option each day. Today’s option is Strawberry, Mint, and Lemon Water.
Day 3 ~ Breakfast: Glowing Green Smoothie, Lunch: Tropical Sunrise Smoothie, Dinner: Berry Beautiful Salad with Strawberry Citrus Dressing, Snack: you can have two (2) throughout the day; I will have an Apple for one and an Emerald 100 calories packet of Raw Almonds for the other (snacks are optional, but choose wisely). Today we have a two smoothies and a salad; tomorrow we have three smoothies, but don’t forget you get two snacks and drink lots of water, which will sustain you (I promise)…it sure won’t hurt me any to miss a meal…
The smoothies are easy to make, simply add all the ingredients to a blender and blend until smooth, enjoy.
1/4 Cup Pineapple
2 Celery Stalks
2 Cups Spinach
1 Cup Water
You can use either frozen or fresh berries and if needed, add a little more water and/or ice to your smoothie as you blend (depending on the consistency you prefer).
I’ve been using a combination of both frozen and fresh fruit, but of course your fresh vegetables won’t be frozen.
1/4 Cup Pineapple
1 Orange, peeled
1 Tbsp Flax Seeds (for me, these are optional ~ I don’t like flax seeds so I leave them out)
1 Cup Water
Again, simply add all the ingredients to a blender and blend until smooth
Berry Beautiful Salad
2 Cups Baby Spinach, chopped
1 Cup Mixed Greens, your choice
1/2 Cup Strawberries, chopped
1/4 Cup Blueberries
1 Carrot, shredded
1/2 Avocado, chopped
2 Green Onions, chopped
Mix all salad ingredients together in a large bowl and top the salad with the following dressing…
Strawberry Citrus Dressing
5 Strawberries, chopped
1/4 Cup Orange Juice
2 Tbsp White Wine OR Apple Cider Vinegar
1 Tbsp Olive Oil
Mix completely, top your salad, enjoy…
Strawberry, Mint and Lemon Water
1/2 to 1 Gallon Purified Water
1 Lemon, thinly sliced
15 Strawberries, quartered
5 Mint Leaves
