Big Bowl Salad with Lemon Dressing

Yay, the weekend ~ It’s still cold in #Missouri and I’m getting grumpy about it, but I do love Saturday’s, so that’s keeping me optimistic. Today is day 6 of a 7-day detox. Today’s water is Classic Cucumber Water.

Day 6 ~ For today, I’m basically repeating Day 2: Breakfast: Strawberry Pineapple Smoothie, Lunch: Salad with Honey Mustard Vinaigrette Dressing, Dinner: Chopped Big Bowl Salad with Fat Free Lemon Dressing, Snack: you can have two (2) throughout the day; I will continue to enjoy an Apple for one and an Emerald 100 calories packet of Raw Almonds for the other (snacks are optional, but choose wisely). Tomorrow is the last day of this self-imposed 7-day challenge where we will enjoy a smoothie, a salad and a meal ~ if you have chosen to join me on this adventure, I thank you!

The smoothies are easy to make, simply add all the ingredients to a blender and blend until smooth, enjoy.

SMOOTHIE

Ingredients

½ Cup Strawberries

½ Cup Pineapple

2 Hearts of Romaine

1 Cup Almond Milk, unsweetened

You can use either frozen or fresh berries and if you need to, add a little water and/or ice to your smoothie as you blend, if needed (depending on the consistency you prefer)…yesterday, I went and bought frozen strawberries and a fresh whole pineapple ~ I cut up the pineapple, weighted the pieces on a kitchen scale and froze it in 4 ounce batches (4 ounces = 1/2 cup).

SALAD #1 (Lunch ~ you can mix and match today’s salads)

Ingredients

2 Cups Spinach

1 Cup Arugula

1/2 Cup Brussels Sprouts, shredded

3 Tbsp Garbanzo Beans

1 Tbsp Dried Cranberries

1 Tbsp Red Onion, chopped

1/2 Cup Cooked Quinoa (cook according to package directions)

2 Tbsp Toasted Almonds

1/2 Avocado, sliced

DRESSING

Honey Mustard Vinaigrette

Ingredients

1 tsp Olive Oil, extra virgin

1 Tbsp Balsamic Vinegar

1 tsp Dijon Mustard

1 tsp Honey

Juice of 1 Orange

1 Tbsp Red Onion, chopped

1 Garlic Clove, finely chopped

Salt and Pepper, to taste

Mix all ingredients together for both the salad and dressing ~ top the salad with the dressing and enjoy

The idea behind this huge salad is that it’s hard to eat all at once.  You can eat half for lunch and have the other half for a snack.  I will probably divide the recipe in half and make a smaller salad.  I know myself well enough to know that I won’t eat a salad as a snack.

DINNER ~ Salad #2

Chopped Big Bowl Salad

Ingredients

2 Cups Baby Spinach, chopped

2 Cups Arugula, chopped

1/2 Pear, chopped

1 tsp Pumpkin Seeds

1 Tbsp Hemp Seeds

1/2 Avocado, chopped

2 Tbsp Garbanzo Beans

Mix all salad ingredients together in a large bowl and top the salad with the following dressing…

DRESSING

Fat Free Lemon Dressing

Ingredients

Juice of 1 Lemon

1 Garlic Clove, chopped

1/2 tsp Dijon Mustard

1/2 Tbsp Balsamic Vinegar

1/2 tsp Real Maple Syrup

Fresh Ground Pepper, to taste

Mix completely, top your salad, enjoy…

WATER

Classic Cucumber Water

Ingredients

1/2 Gallon Purified Water

1 Medium Cucumber, cleaned, peeled and cut into 1/2 inch slices

Add sliced cucumber to the water, enjoy
