Chicken Fajita Lettuce Wraps

Chicken Fajita Lettuce Wraps

Happy First Monday of February ~ I am undertaking a 7-day detox challenge, and I challenge you to do the same.  This past weekend, for me, included a lot of eating out, drinking and birthday celebrating, hence a 7-day detox is in order…plus, a pair of jeans I tried to wear didn’t fit quite right (or at all).  I know that I have not been drinking enough water, so water consumption is part of this challenge ~ drink half of your body weight in water each day, in ounces (if you weigh 200 pounds, drink 100 ounces of water).  If you hate drinking plain ole water, below you will find a flavored water recipe ~ a different water option each day.

Day 1 ~ Breakfast: Berry Smoothie, Lunch: Salad with Chicken and a Orange Mustard Vinaigrette Dressing, Dinner: Chicken Fajita Lettuce Wraps, Snack: you can have two (2) throughout the day; I will have an Apple for one and an Emerald 100 calories packet of Raw Almonds for the other (snacks are optional, but choose wisely).

The smoothies are easy to make, simply add all the ingredients to a blender and blend until smooth, enjoy.

Don’t worry, we are not going to eat the same thing every single day for the next seven days, boring.

½ Cup Strawberries

½ Cup Blueberries

¼ Cup Raspberries

2 Cups Spinach

You can use either frozen or fresh berries and if you need to, add a little water and/or ice to your smoothie as you blend, if needed…

2 Cups Mixed Greens

2 Cups Baby Spinach

1 Cup Brussels Sprouts, shaved

1 Orange, peeled and segmented

½ Avocado, sliced

1 tsp Hemp Seeds

1 tsp Almonds, toasted

1 tsp Raw Pumpkin Seeds

½ Cup Chicken, cooked and chopped

Orange Mustard Vinaigrette

1 tsp Olive Oil, extra virgin

1 tsp Dijon Mustard

1 tsp Real Maple Syrup

1 Orange, squeezed for juice

2 tsp Balsamic Vinegar

1 Garlic Clove, chopped

½ Shallot, chopped

Fresh Ground Pepper, to taste

Mix all ingredients together for both the salad and dressing ~ top the salad with the dressing and enjoy

The idea behind this huge salad is that it’s hard to eat all at once.  You can eat half for lunch and have the other half for a snack.  I will probably divide the recipe in half and make a smaller salad.  I know myself well enough to know that I won’t eat a salad as a snack.

Chicken Fajita Lettuce Wraps

1 tsp Olive Oil

4 oz Chicken Breast, cut into thin strips

1 tsp Chili Powder

1 tsp Oregano, dried or fresh chopped

1 tsp Garlic Powder

2 Bell Peppers, cut into thin strips

1 Onion, cut into thin rings

1 Jalapeno, all seeds and ribs removed, thinly sliced (optional)

4 Large Butter Lettuce or Romaine Lettuce Leaves

FIRST In a skillet, heat the Olive Oil over medium heat

SECOND Add the Chicken and brown on all sides for about 5 minutes

THIRD Add the Chili Powder, Oregano and Garlic Powder to the chicken

FOURTH Toss together until the chicken strips are all coated

FIFTH Add the Bell Peppers, Onions and Jalapeno to the skillet

SIXTH Cook until soft, about 10 – 15 minutes

SEVENTH Scoop into the lettuce leaves and serve hot

Makes 1 Serving

If you’re cooking for your family or friends, simply make extra ~ you can double or triple this recipe and serve it with tortillas for your family and friends.

½ Gallon Purified Water

½ Lemon, sliced

½ Lime, sliced

½ Grapefruit, sliced

1 Cup Cucumber, sliced

Add all the sliced ingredients to the water, enjoy

I hope you will join me on the 7-day challenge ~ my goal is to feel better (less puffy, for lack of a better term) ~ I look forward to your comments.
