Miner's Potato and Ham Frittata

I’ve been craving breakfast for dinner ~ Miner’s Potato and Ham Frittata is great for brunch or with a salad for dinner…I, of course, am opting for dinner.


2 Medium Red Potatoes

1 tsp Olive Oil

4 Green Onions, chopped

1 Garlic Clove, minced

4 Eggs, beaten

4 Egg Whites, beaten

¾ Cup Lean Ham, chopped

Salt and Pepper, to taste

¼ Cup Cheddar Cheese, shredded

Salsa, optional

FIRST Pierce each Potato with a fork

SECOND Microwave Potatoes on high for 2 ½ minutes and turn

THIRD Microwave Potatoes for 2 ½ minutes longer

FOURTH Cut Potatoes into thin slices; cool for 10 minutes

FIFTH Heat the Olive Oil in an ovenproof nonstick skillet

SIXTH Add the Green Onions and sauté until tender

SEVENTH Stir in the Garlic, sauté one minute longer

EIGHTH Mix the Green Onions mixture, Eggs, Egg Whites, Ham, Salt and Pepper in a bowl

NINTH Pour into the nonstick skillet (coat with nonstick cooking spray, if needed)

TENTH Layer with Potatoes

ELEVENTH Cook over medium-low heat for 5 – 7 minutes or until the edge is set and the frittata is brown on the bottom

TWELFTH Broil 6-inches from heat source for 2 – 3 minutes or until just set

THIRTEENTH Sprinkle with the Cheese

FOURTEENTH Run a knife around the edge to loosen the frittata

Slide onto a platter

Cut into 4 wedges

Serve immediately with salsa of your choice
