Ingredients (measured on a scale)
All Purpose Flour – 5.25 oz
Baking Powder – ¼ oz
Baking Soda – ¼ tsp
Salt – ¼ tsp
Sugar – 1.13 oz
Eggs – 2
Buttermilk – 8 oz
Butter, melted – 1 oz
Vegetable Oil – as needed
Vanilla – ¼ tsp (optional, but highly recommended)
FIRST Sift the flour, baking powder, baking soda, salt and sugar into a large bowl
SECOND Combine the eggs with the buttermilk and mix well. Pour all at once into the center of the dry ingredients. Mix slowly with a whisk in a controlled circular motion.
THIRD Add the butter when about ¾ of the dry ingredients are moistened. Continue to mix only until the butter is worked in. Do not over-mix.
FOURTH Keep the batter cool (if making large batches) by holding it over an ice bath.
FIFTH Heat large skillet or griddle – medium heat, lightly greased with vegetable oil.
SIXTH Ladle (use a legit ladle) approx. 2.5 fl oz of batter onto the pan for each pancake. When bubbles break and the bottom is golden brown, 1-2 minutes, turn over. Finish cooking on second side, about one minute.
Serve immediately with your favorite syrup, honey, powdered sugar, etc…Enjoy
