Kassie’s Chocolate Chip Cookies

My daughter, Kassie, makes the best chocolate chip cookies this side of the Mississippi River (whatever side you may reside), and I found her recipe.


1 ½ cups flour

½ tsp salt*

½ cup brown sugar

1 tsp baking soda

½ cup unsalted butter*

6 Tbsp sugar

1 tsp vanilla

1 egg

2 cups chocolate chips

*You can use salted butter, if you wish, but in doing so omit the ½ tsp salt

FIRST sift flour, baking soda and salt; set aside.

SECOND with a mixer, beat together butter and sugars for about 2 minutes

THIRD add egg and vanilla, mix on low

FOURTH gradually add flour mixture

FIFTH add chocolate chips and stir just enough until incorporated into cookie dough

SIXTH chill dough for about an hour

SEVENTH preheat oven to 350 degrees and line baking sheets with parchment paper

EIGHTH form dough into balls and place on baking sheets

NINETH bake cookies, one sheet at a time, for 10-13 minutes.

Makes approx two (2) dozen cookies
