Taco Tuesday comes around once a week and personally I love tacos (crunchy please) or are you more of a quesadilla guy or gal?  How about mixing it up a bit for a Pizzadilla!  Don’t be scared…this recipe is stuffed with steak, mushrooms and mozzarella, but once again you can use any of your favorite ingredients ~ make it your own.  Cheers!


Cooking Spray

8 Ounces Top Sirloin Steak, trimmed and thinly sliced

Kosher Salt, divided (1/8 tsp and ¼ tsp)

1 Tbsp Butter

2 Garlic Cloves, minced

8 Ounces Pre-sliced Cremini Mushrooms (commonly known as ‘baby bella’ or ‘baby portobello’ mushrooms)

4 Ounces Mozzarella Cheese, shredded and divided (about 1 cup)

4 8-inch Flour Tortillas

1 Cup Marinara Sauce, warmed

FIRST Add steak to large skillet, coated with cooking spray, over medium-high heat

SECOND Sprinkle with 1/8 tsp salt and cook about 3 minutes or until browned, stirring occasionally

THIRD Place steak in medium bowl

FOURTH Add the butter to the pan and swirl until melted

FIFTH Add ¼ tsp salt, garlic and mushrooms

SIXTH Cook 6 minutes or until mushrooms brown and liquid evaporates, stirring occasionally

SEVENTH Add mushrooms to steak and toss to combine

EIGHTH Wipe pan clean with paper towels

NINTH Reduce heat to medium

TENTH Sprinkle 2 Tbsp cheese evenly over half of each tortilla

ELEVENTH Divide steak mixture evenly among tortillas and sprinkle with remaining ½ cup cheese

TWELFTH Fold tortillas in half over filling and carefully coat both sides of quesadillas with cooking spray

THIRTEENTH Place 2 quesadillas in pan, cooking 2 minutes on each side or until browned and cheese melts

FOURTEENTH Repeat with remaining quesadillas

Cut each into 4 wedges and serve with warm marinara

Serves 4 (serving size: 4 wedges and ¼ cup marinara)
