Tortellini with Sausage

Tortellini with Sausage courtesy of my friend, Heidi, who says this dish is delish…and great for lunch the following day.


1 Pound Ground Sausage*

8 Ounces Cream Cheese, softened and diced

3 Cups Chicken Broth

2 14.5-Ounce Cans Italian-Style Diced Tomatoes, drained

20 Ounces Cheese Tortellini (refrigerated tortellini works just fine)

2 Cups Fresh Spinach, chopped

*Can also use ground chicken or ground turkey in place of ground sausage

FIRST Brown the sausage in a large skillet; drain grease

SECOND Add the diced cream cheese

THIRD Mix in 3 cups of chicken broth, stir in the drained tomatoes, and mix until the cream cheese is melted

FOURTH Mix in the tortellini and bring to a light boil

FIFTH Let simmer with the lid askew

SIXTH Cook tortellini according to package directions until al-dente; may take as little as 4 minutes

SEVENTH Mix in the chopped spinach and allow it to wilt; only about a minute

EIGHTH Remove from heat

NINTH Let the sauce thicken prior to serving; about 5 minutes**

**For thinner sauce, add up to 1 cup chicken broth

Serve with toasted French Bread or your favorite bread sticks and a glass of white wine.
