Today is a Chili kinda day.  I prefer to make my own Chili Seasoning, as opposed to buying a prepared packet of seasoning – I like to know exactly what is in my food.  Enjoy with your favorite cornbread – or the recipe listed below – biscuits or crackers…or make this chili into a Frito Pie.  So many options…



1 Pound Ground Beef – if you want to mix it up a little bit, use ½ pound ground beef and ½ pound ground sausage, I promise you won’t be disappointed

½ Cup Chopped Onion

1 Can (8 oz) Tomato Sauce

1 Can (16 oz) Stewed Tomatoes – use Italian style stewed tomatoes if you’re feeling adventurous

1 Can Chili Beans

1 Can Water (use tomato sauce can after you’ve emptied it)


2 Tbsp Chili Powder

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Crushed Red Pepper Flakes

½ tsp Cayenne Pepper (optional – I do not use cayenne pepper in my seasoning, but that’s a personal preference)

2 tsp Dried Oregano

2 tsp Paprika

2 Tbs Ground Cumin

2 tsp Sea Salt

½ tsp Black Pepper

Measure out all chili seasoning ingredients into a small bowl for ease of use

FIRST In a large skillet, brown the ground beef and chopped onion; drain fat

SECOND Transfer cooked beef to a large sauce pan and stir in the chili seasoning, tomato sauce, stewed tomatoes, chili beans and water

THIRD Simmer, stirring occasionally, until chili reaches thickness, about 30 to 45 minutes

Serve with Cornbread, using this recipe:


1 Cup All Purpose Flour

1 Cup Yellow Cornmeal

¼ Cup Sugar

1 Tbsp Baking Powder

1 tsp Salt

1 Cup Skim Milk

4 Egg Whites

¼ Cup Natural Applesauce

FIRST Preheat oven to 400 F

SECOND Spray an 8-inch square baking pan with nonstick cooking spray (a lot of times I use a circular pie plate to make my cornbread)

THIRD In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt – mix well

FOURTH In a small bowl, combine milk, egg whites and applesauce – mix well

FIFTH Stir applesauce mixture into flour mixture just until moistened

SIXTH Spread batter into prepared pan

SEVENTH Bake 20 to 25 minutes or until toothpick inserted in center comes out clean

Serve warm with your chili
