Krista’s No Bake Cookies
This recipe is my specialty and a Christmas tradition, always made with love.
2 cups sugar
½ cup milk
½ cup unsalted butter (1 stick)
1 tsp vanilla
1/3 cup cocoa
½ cup creamy peanut butter
3 cups quick cook rolled oats
FIRST In a saucepan combine stick of butter, sugar and milk, stir over medium-high heat until butter starts to melt. Add cocoa and stir continuously until mixture begins to boil. Bring to rapid boil for one minute (60 seconds – no more, no less). Remove from heat.
SECOND Add peanut butter and vanilla; stir until peanut butter melts completely.
THIRD Add oats and stir thoroughly until fully combined.
FOURTH Scoop cookie mixture onto wax paper, parchment paper, or even foil, if that’s all you have. Scoop cookies using whatever size scooper you like – I use a small Pampered Chef scoop, but an ice cream scoop works well also, or just use your cereal or soup spoons if that’s all you have onto whatever paper/foil you have.
LASTLY Let cookies set in a space at room temperature for about an hour. After cookies have set-up, you need to test one for accuracy 😊
Makes about 24 cookies (depending on what size scoop you use)
I make these each year for my brother for Christmas; however, you can enjoy these babies any time of year for any occasion.
