Fattoush Salad



¼ cup lemon juice

2 Tbsp white wine vinegar

2 small cloves garlic, minced

¼ tsp dried oregano

1/8 tsp paprika

1/3 cup extra virgin olive oil


3 cups cherry or grape tomatoes, halved

3 small cucumbers, cut into half-moons

2/3 cup sliced green onions

1 cup chopped parsley

1 cup whole mint leaves

5 cups chopped romaine or green leaf lettuce

2 regular-size pita breads, toasted and broken into bite-size pieces, or 3 cups pita chips

¼ tsp salt

Black pepper

Paprika, for serving

FIRST make the dressing: mix together the lemon juice, vinegar, garlic, oregano, paprika, and oil in a small glass and set aside.

SECOND In a large bowl, mix together the tomatoes, cucumbers, green onions, parsley, mint, and romaine.  Add ¾ of the dressing, tossing it all around, then fold in the pita pieces, and sprinkle with salt.  Taste and add the remaining dressing as needed.  Sprinkle with black pepper and paprika, to taste.  Serve immediately.

Makes 4-6 servings
